Photon is a small standalone camera sold for $200 with companion Mac software called Photon Transfer. It has no Bluetooth, Wi-Fi, or cellular connectivity, so photos stay on the device unless someone has physical access to it. The camera captures 2304 x 1296 pixel photos in RAW format, stores up to 20,197 photos (overwriting the oldest when full), and is rated for a minimum of 50,000 photos per charge. It supports time-based and motion-based capture, is rain-resistant (but not submersible), and is fully open-source in both hardware and software.
